THAI RED CURRY NOODLE SOUP
Way better than takeout! Filled with morsels of juicy chicken, rice noodles, cilantro, basil, and lime juice!
Simple and delicious. I doubled the recipe but only had one small jar of Red Curry Paste, so I used it completely, which was just under 6 Tbsp… then mistakenly added more fish sauce and replaced fresh ginger with ginger paste. I provided my daughter with a container, and her admiration for this soup brought me joy. Even though my soup lacked spice, it was very tasty, and I felt sad when it finished; fortunately, I had made twice the amount.

What is red curry paste and where can I locate it?
Red curry paste, often utilized in Thai cuisine, is created from a mixture of red chili pepper, garlic, lemongrass, Thai ginger, and an assortment of spices.
Red curry paste is usually utilized for stir-frying, soups, or blended with coconut milk for curry. It is easily found in many supermarket chains, especially the Thai Kitchen brand, and on the internet, with certain brands including shellfish (shrimp paste).
Hints and strategies for achievement
Utilize your preferred protein. This recipe is great for chicken thighs, chicken breasts, shrimp, or tofu.
Opt for coconut milk with full fat. While lite coconut milk can be used, full-fat coconut milk will produce a richer and creamier broth.
Fish sauce is a champion. Fish sauce serves as an essential component, harmonizing the flavors while contributing saltiness and umami without dominating them. A small amount can have a significant impact.
Blend it together. Replace the red curry paste with green, incorporate additional vegetables (cabbage, zucchini, mushrooms, or bok choy), or choose your preferred noodles (vermicelli, udon, or soba).
Split and conquer. When keeping leftovers, separate the broth and noodles. This will assist the noodles in maintaining their texture.
What to accompany Thai red curry noodle soup.

Thai Red Curry Noodle Soup: Common Inquiries
Is it possible to use an alternative protein?
Certainly! Both shrimp and tofu are excellent choices.
Which red curry paste brand do you suggest?
We absolutely adore Mae Ploy (includes shrimp paste). Thai Kitchen is also excellent with gentle spiciness and is more commonly found in many grocery stores.
What is the flavor of fish sauce?
Fish sauce emits a strong, intense “fishy” aroma but when heated, it contributes savory, salty, umami richness.
In what ways can I keep remaining food?
Leftover food can be kept in a sealed container in the refrigerator for 1-2 days, ensuring the rice noodles are separated from the broth.
Is this suitable for freezing?
We advise against freezing this because coconut milk often separates when it’s frozen.
