Way better than takeout! Filled with morsels of juicy chicken, rice noodles, cilantro, basil, and lime juice! 

Simple and delicious. I doubled the recipe but only had one small jar of Red Curry Paste, so I used it completely, which was just under 6 Tbsp… then mistakenly added more fish sauce and replaced fresh ginger with ginger paste. I provided my daughter with a container, and her admiration for this soup brought me joy. Even though my soup lacked spice, it was very tasty, and I felt sad when it finished; fortunately, I had made twice the amount.
